Simple and Delicious Poached Salmon

Being from the Pacific Northwest we love our Salmon dishes. We truly believe we have some of the best Salmon in the world.

I can tell you from experience that there is nothing like fresh Salmon pulled right out of the river. There are so many ways to prepare it but I love the simple things in life and this is one of the simplest recipes I know.

4 Salmon filets Skins removed
20 asparagus spears
1 cup of water
1/4 cup of dry white wine
salt and pepper to taste
1 tsp roasted garlic
3 tbs unsalted butter
3 tbs fresh chopped chives

In a large pan with a lid pour the one cup of water and place asparagus spears in single layer
add salt to water and roasted garlic. Season the salmon and place the filets on top of the asparagus. Bring water to a simmer, lower heat, cover and simmer for 8 to 10 minutes, checking frequently.
when salmon is done, remove that and asparagus from pan, remove 1/2 of the remaining water to a glass measuring cup (for possible later use) and add the wind to the pan, let simmer for aprox 5 minutes adding liquid if needed. remove from heat and add butter and chives whisk until butter is melted and pour over asparagus and Salmon.
